Where to begin...it's been a wild ride. We weren't always NOM Bakery. We branded and rebranded until something stuck. Indecision and, honestly, life getting in the way halted progress for a while. Life happens right? But we never stopped working. We tested and retested recipes and went through many iterations of cookies and cakes and anything you can think of. And still are! We're constantly developing, constantly seeking perfection, constantly striving to make the best product possible for your enjoyment. We care about our customers and want to break the stigma of vegan food being less than. Because it's not. Our bakes are delicious. Not to toot our own horn. But give us a try and see for yourself! Hi! I'm Jade, the owner and head baker of NOM Bakery. I found baking 5 years ago when I was in a depression. It soothed me and gave me purpose. After a little while it became a passion, one I've held onto and worked hard at. I was a woman possessed; scouring the internet, watching endless Youtube tutorials and absorbing as much information as I could. Even going so far as to relearn what little French I knew to watch French pastry chefs demonstrate how to make incredible entremets and desserts. I wanted to learn everything. Everything there is to know. I practiced and practiced, getting frustrated and elated in equal measure. I started developing my own recipes once I started to understand the principles of baking. Not all of them worked, most weren't perfect. But I kept going. Then, I started looking into the practices and ethics of animal farming. I decided to completely overhaul my diet and follow a vegan lifestyle; world turned upside down. I became disenchanted with the traditional baking methods. The use of animal product becoming an unsettling thought. It took a while for me to get back in the kitchen. But again, I studied. I read and watched everything I could possibly find on vegan substitutes. I then stumbled onto a vegan baking channel called Gretchen's Vegan Bakery. And finally, finally things started to click. I rushed back to the familiarity of my kitchen and worked my butt off. Just as I'd overhauled my diet, I started completely from scratch. Put my old work books aside and started a whole new recipe book. It took 2 years to get to a place where I was happy with my new products. I continue to research and tinker. Sometimes having sleepless nights agonizing over how to improve certain aspects of some recipes. Lightbulb moments come and go but when they come, it's the best feeling in the world. This was never in my life plan. But I'm so happy it found me.
